Jay Khan's 40-seat agave temple, with over 200 bottles of tequila, mezcal, raicilla and sotol. Took the Legend of the List award in 2026 for sustained influence.

Vibe

Reclaimed wood, warm brick, a hand-carved coa blade in the wall and a mural of Mayahuel. Relaxed, knowledgeable, never precious about it.
